Lives lived: Paul Singh (1947 – 2011)

An entrepreneur, a father, a chef, and a pioneer… Paul Singh wore each of these titles in a spirited life that took him from Malaysia to Canada.
Before Vancouverites had ever heard masala dosas and vedas, Paul was already running one of first kitchens in the Lower Mainland specialising in South Indian food. Every evening a line-up of diners would extend around the corner of his restaurant Noor Mahal, to purchase his signature dishes on Fraser Street.
Singh managed the popular Vancouver restaurant with his wife Susan. Everyone was not just a customer but ‘family’ who came to dine in with the couple every evening.
Born in the famous port and trading town of Malacca, Malaysia, Paul emigrated to Canada in the early 70’s where he brought with him his skills in North and South Indian cuisine, and also in the Southeast Asian cuisine of his native country.
Over time, his passion for the culinary arts drew him to Western food and particularly to ice cream, which would become his next success story with the growth of his business Maama Mia (at Scott road and 72nd).
His Surrey-based enterprise pioneered flavours such as the ‘matka kulfi’ or exotic concoctions made from durian.
Though Paul’s passion was in his kitchen, his heart belonged to his wife and four children. He was at his happiest when watching them grow and thrive.
Last week, Paul passed away at the age of 64, on his annual wedding anniversary trip to Las Vegas.
Paul was a man who has time for everyone, food for those who were hungry, and an ever-ready smile. He will be missed by all who knew him.
