Ingredients
1lb ground turkey 1/3 cup dry bread crumbs 1/3 cup milk
1 clove garlic, minced 2 green onions, minced 1/2 tsp cinnamon
1/4 tsp salt freshly ground pepper 1/3 cup flour 2 tbsp olive oil 20 mandarin orange
segments
1. Combine bread crumbs and milk. Combine turkey, garlic, onion, cinnamon, salt and pepper.
2. Stir into bread crumb mixture and combine thoroughly. Chill for 2 hours. Form into 20 small balls. Dredge in flour.
3. Place oil in skillet on medium heat. Saute turkey balls until golden brown all over, about 5-7 minutes. (They may also be baked in the oven for approx 7 - 8 minutes, depending on the size of the meatballs)
4. Serve on toothpicks with mandarin orange segments as a garnish; or serve with pineapple glaze.
Pineapple Glaze
2 cups pineapple juice
3 tbsp brown sugar
1/4 cup lime juice (or less)
grated rind from 1/2 lime
2 tsp cornstarch
2 tsp water
1. In saucepan, bring 2 cups pineapple juice; 1/4 cup ime juice; 3 tbsp packed brown sugar; and grated lime to a boil over medium-high heat.
2. Boil until reduced to a little over 1 cup (250 mL), about 10 - 15 minutes. Mix 2 tsp (10 mL) cornstarch with 2 tbsp (30 mL) water; stir into glaze and boil until thickened, about 1 minute. Let cool.
